It’s one of my favourite times of year – when we get to start eating from our garden. Right now it is just spinach, lettuce and swiss chard but it won’t be long until the zucchini and peas are ready.
And we have a plethora of spinach. We have been having lots of spinach salads, quiche and I made spanokapita for the first time ever – yummy!
We even have spinach for breakfast:
We often drink green smoothies and this one was especially good. (Pronounced delicious by BOTH kiddos.) The garden grown spinach makes such a difference in the taste. I put the recipe over at Fresh Meals. (Which now that I am not pregnant and cooking again may have slightly more updates from me :))
